Recipe of the day: American pancakes of doom and fluffyness

This recipe is taken from "The America's Test Kitchen Family Cookbook", which I can only recommend to everyone who loves good food. All the recipes I've tried so far work out fantastically. The instructions are very detailled and if you follow them, there is no way you're gonna mess up.
